Instructions
Prepare the Potatoes
Boil the potatoes in salted water until they are completely tender and can easily be pierced with a fork. Drain them very well and let them cool slightly. Mash the potatoes until smooth. Avoid adding milk or butter because the croquette mixture needs to remain firm enough to shape.
Prepare the Chicken
Use cooked, boneless chicken breast or thigh meat. Shred the chicken very finely. If the chicken is moist, squeeze out or drain any excess liquid. Finely shredded chicken blends much better with the potatoes and makes the croquettes easier to shape.
Make the Filling
Place the mashed potatoes and shredded chicken in a large bowl. Add the mozzarella, cheddar, chopped onion, garlic, parsley, black pepper, paprika, garlic powder, oregano, salt, egg, flour, and breadcrumbs.
Mix everything thoroughly until you have a thick, cohesive mixture. The cheese should be evenly distributed throughout the chicken and potato mixture.
Check the Consistency
Take a small amount of the mixture and squeeze it gently in your hand. It should hold its shape without falling apart. If the mixture feels too soft or sticky, add 1–2 tablespoons of breadcrumbs and mix again.
If it feels very dry, add a small amount of beaten egg, about 1 tablespoon at a time.
Shape the Croquettes
Scoop out approximately 2 tablespoons of the mixture for each croquette. Roll it between your hands and shape it into small cylinders, oval croquettes, or round balls.
For an extra cheesy center, place a small cube of mozzarella in the middle before sealing and shaping the croquette.
Make sure there are no cracks around the outside because exposed cheese can leak during frying.
Chill the Croquettes
Arrange the shaped croquettes on a tray lined with parchment paper. Cover and refrigerate for at least 30 minutes.
Chilling helps the croquettes firm up and greatly reduces the chance of them breaking apart while cooking.
Prepare the Coating
Place the flour in one shallow bowl.
Beat the eggs in a second bowl.
In a third bowl, combine the breadcrumbs, paprika, garlic powder, black pepper, and salt.
Coat Each Croquette
Take one chilled croquette and lightly coat it in flour. Shake off the excess.
Dip it into the beaten egg, making sure the entire surface is covered.
Finally, roll it thoroughly in the seasoned breadcrumbs and gently press the breadcrumbs onto the surface.
Repeat with all the croquettes.
For an extra-crispy coating, dip each croquette in egg and breadcrumbs a second time.
Fry the Croquettes
Heat enough vegetable oil in a deep pan to allow the croquettes to cook evenly. Heat the oil to approximately 175°C–180°C (350°F–355°F).
Carefully place a few croquettes into the hot oil. Do not overcrowd the pan because this lowers the oil temperature and can make the croquettes greasy.
Fry for about 3–5 minutes, turning occasionally, until they become deep golden brown and crispy on all sides.
Remove them with a slotted spoon and place them on a paper towel-lined plate or wire rack to drain excess oil.
Air Fryer Method
Preheat the air fryer to 200°C (400°F).
Lightly spray the coated croquettes with cooking oil and place them in a single layer in the air fryer basket.
Air fry for approximately 10–14 minutes, turning halfway through, until crisp and golden.
Oven-Baked Method
Preheat the oven to 220°C (425°F).
Place the coated croquettes on a parchment-lined baking sheet. Lightly spray or brush them with oil.
Bake for approximately 18–25 minutes, turning them halfway through, until golden and crisp.
Prepare the Garlic Mayo Dip
Mix mayonnaise, lemon juice, minced garlic, parsley, black pepper, and a small pinch of salt in a bowl.
Cover and refrigerate for 10–15 minutes before serving. This allows the garlic flavor to develop.
Serve
Serve the Cheesy Chicken Potato Croquettes immediately while they are hot and crispy. Cut one open to reveal the creamy potato, tender chicken, and melted cheese inside.
They pair especially well with garlic mayo, ranch dressing, spicy ketchup, sweet chili sauce, or a fresh green salad.

Recipe Notes
For the crispiest croquettes, make sure the mashed potatoes are not watery.
Cold leftover roasted or boiled chicken works especially well for this recipe.
Mozzarella gives the best cheese pull, while cheddar adds a stronger cheesy flavor. You can use a combination of mozzarella, cheddar, Monterey Jack, or Colby Jack.
Do not fry the croquettes before the oil is properly hot. Cool oil can cause the breadcrumb coating to absorb too much oil.
Do not overcrowd the pan. Frying in small batches gives the croquettes an evenly golden and crispy exterior.
For freezer preparation, shape and coat the croquettes, then place them on a tray and freeze until solid. Transfer them to a freezer-safe bag or container. They can be cooked directly from frozen; simply add a few extra minutes to the cooking time.
For a stronger garlic flavor, add 1/2 teaspoon roasted garlic powder to the potato mixture.
For a spicy version, add 1/2 teaspoon chili flakes or 1/4 teaspoon cayenne pepper.
For children, reduce the black pepper and omit the chili.
Q&A
Q: Can I make these croquettes ahead of time?
A: Yes. You can prepare and coat them several hours ahead and keep them refrigerated until ready to cook.
Q: Can I freeze chicken potato croquettes?
A: Yes. Freeze the uncooked, fully coated croquettes in a single layer first. Once frozen solid, transfer them to an airtight freezer bag or container.
Q: Why are my croquettes falling apart?
A: The mixture may contain too much moisture, the croquettes may not have been chilled long enough, or the coating may not have been sealed properly. Add a little more breadcrumbs to the mixture and refrigerate the shaped croquettes before frying.
Q: How do I keep the cheese from leaking?
A: Make sure the cheese is completely enclosed by the chicken-potato mixture and there are no cracks. Chilling the croquettes before frying also helps them maintain their shape.
Q: Can I use leftover mashed potatoes?
A: Yes. Leftover mashed potatoes are excellent for this recipe, especially if they are relatively firm and not overly creamy.
Q: Can I use cooked chicken breast?
A: Yes. Chicken breast works very well, but chicken thigh can give the croquettes a slightly juicier texture.
Q: Can I make them without eggs?
A: Yes. You can use a suitable egg substitute for binding the mixture and another coating substitute such as milk or buttermilk before the breadcrumbs.
Q: Can I make these in an air fryer?
A: Yes. Air frying gives them a crispy exterior with less oil. Lightly spray the croquettes with oil and cook at 200°C (400°F) for about 10–14 minutes, turning halfway.
Q: Can I bake them instead of frying?
A: Yes. Bake at 220°C (425°F) for about 18–25 minutes, turning halfway and lightly spraying with oil.
Q: What cheese is best?
A: Mozzarella is excellent for a stretchy melted center. Cheddar provides a richer flavor. Using both gives a good balance of flavor and cheese pull.
Q: What can I serve with these croquettes?
A: Garlic mayo, ranch dressing, spicy ketchup, sweet chili sauce, coleslaw, green salad, or roasted vegetables all work well.
Q: Are these suitable for a party?
A: Yes. They can be shaped into small bite-sized croquettes and prepared ahead of time, making them ideal for appetizers, gatherings, lunch boxes, or party platters.
