Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 12 oz (340 g) linguine
  • 6 oz (170 g) soft goat cheese, crumbled
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 tablespoons honey
  • 3 tablespoons butter
  • 3 cloves garlic, finely minced
  • ½ cup reserved pasta water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • 2 tablespoons chopped fresh parsley

Optional:

  • ¼ teaspoon red pepper flakes
  • 2 tablespoons toasted walnuts, chopped
  • Fresh basil for garnish
  • Extra goat cheese and Parmesan for serving

Instructions

  1. Bring a large pot of generously salted water to a boil.
  2. Add the linguine and cook according to the package directions until al dente.
  3. Before draining, reserve about ½ cup of the pasta water. Drain the linguine and set aside.
  4. While the pasta cooks, melt the butter in a large skillet over medium-low heat.
  5. Add the minced garlic and cook for about 30–45 seconds, stirring constantly. Do not allow the garlic to brown.
  6. Pour in the heavy cream and bring it to a gentle simmer.
  7. Reduce the heat to low. Add the goat cheese gradually, stirring until it melts into the cream and creates a smooth sauce.
  8. Add the Parmesan cheese and continue stirring until melted.
  9. Stir in the honey, lemon juice, lemon zest, Italian seasoning, black pepper, and salt.
  10. Add about ¼ cup of the reserved pasta water and stir. Add more pasta water, a tablespoon at a time, until the sauce becomes silky and coats the back of a spoon.
  11. Add the drained linguine directly to the skillet.
  12. Toss the pasta gently for 1–2 minutes until every strand is coated in the creamy goat cheese sauce.
  13. Stir in red pepper flakes if you want a little heat.
  14. Taste and adjust the honey, salt, lemon, or pepper according to your preference.
  15. Divide the linguine among four plates.
  16. Garnish with fresh parsley, extra Parmesan, crumbled goat cheese, and toasted walnuts if desired.
  17. Serve immediately while the sauce is warm and creamy.

Recipe Tips & Q/S

Q: Can I use another type of pasta?

A: Yes. Spaghetti, fettuccine, bucatini, tagliatelle, or short pasta shapes can all work well.

Q: Can I use whipped goat cheese?

A: Yes. It will melt easily into the sauce and create a smooth texture.

Q: Is this pasta very sweet?

A: No. The honey adds a subtle sweetness that balances the tanginess of the goat cheese. You can reduce it to 1–2 tablespoons for a more savory version.

Q: Can I make it more savory?

A: Yes. Reduce the honey and add extra garlic, Parmesan, black pepper, and a pinch of red pepper flakes.

Q: Why is my goat cheese sauce too thick?

A: Add reserved pasta water a little at a time while tossing. The starchy water helps loosen the sauce while keeping it creamy.

Q: Why did my sauce become grainy?

A: Goat cheese and Parmesan can separate if heated too aggressively. Keep the heat low when adding the cheeses and stir continuously.

Q: Can I add protein?

A: Yes. Grilled chicken, crispy bacon, shrimp, or roasted salmon pair beautifully with this pasta.

Q: What vegetables can I add?

A: Spinach, roasted asparagus, caramelized onions, mushrooms, roasted butternut squash, or sautéed zucchini are excellent choices.

Q: Can I make it ahead of time?

A: It’s best served immediately because creamy cheese sauces thicken as they cool. If preparing ahead, reserve extra pasta water for reheating.

Q: How do I store leftovers?

A: Refrigerate in an airtight container for up to 3 days.

Q: How do I reheat it?

A: Reheat gently in a skillet over low heat with a splash of milk, cream, or pasta water. Stir frequently until smooth and heated through.

Q: Can I freeze this pasta?

A: Freezing is not recommended because the cream and goat cheese sauce may separate and become grainy after thawing.

Q: What kind of honey works best?

A: Mild floral honey works beautifully. Clover, wildflower, or orange-blossom honey can all be used. Avoid very strong honey if you want the goat cheese flavor to remain prominent.
