A rich, creamy, slow-cooked dessert layered with tender bananas, buttery caramel, vanilla pudding, and soft vanilla wafers. It is an easy comfort dessert that tastes like classic banana pudding with a delicious caramel twist.
Ingredients
For the Banana Pudding:
5–6 ripe but firm bananas, sliced
1 box (11 oz / 312 g) vanilla wafers
1 box (3.4 oz / 96 g) instant vanilla pudding mix
2 cups (480 ml) cold whole milk
1 can (14 oz / 396 g) sweetened condensed milk
1 teaspoon vanilla extract
½ teaspoon ground cinnamon, optional
¼ teaspoon salt
For the Caramel Layer:
½ cup (115 g) unsalted butter
¾ cup (150 g) packed light brown sugar
½ cup (120 ml) heavy cream
1 teaspoon vanilla extract
¼ teaspoon salt
For the Topping:
1 cup (240 ml) heavy whipping cream
2 tablespoons powdered sugar
½ teaspoon vanilla extract
¼ cup caramel sauce, for drizzling
2–3 crushed vanilla wafers, optional
Instructions
Prepare the crockpot
Lightly grease the inside of a 6-quart slow cooker with butter or nonstick cooking spray.
For easier cleanup, you can also use a slow-cooker liner.
Make the caramel sauce
Place the butter, brown sugar, heavy cream, vanilla, and salt in a small saucepan over medium-low heat.
Stir continuously until the butter melts and the brown sugar dissolves.
Cook for about 2–3 minutes until smooth and glossy.
Do not boil aggressively.
Remove from the heat and set aside.
Prepare the pudding mixture
In a large bowl, whisk the cold milk and instant vanilla pudding mix for about 2 minutes until the mixture thickens.
Add the sweetened condensed milk, vanilla extract, cinnamon, and salt.
Whisk until completely smooth.
Create the first layer
Arrange a layer of vanilla wafers across the bottom of the crockpot.
Add a layer of sliced bananas over the wafers.
Drizzle some of the caramel sauce over the bananas.
Spread approximately one-third of the pudding mixture over the top.
Repeat the layers
Repeat the layers:
Vanilla wafers
Sliced bananas
Caramel sauce
Vanilla pudding
Continue until the ingredients are used, finishing with a layer of pudding.
Reserve a little caramel sauce for serving.
Slow cook
Cover the crockpot with the lid.
Cook on LOW for approximately 2–2½ hours.
Do not cook on HIGH because the pudding can become overly hot and change texture.
The edges should be warm and set while the center remains soft and creamy.
Cool the pudding
Turn off the slow cooker and remove the lid.
Allow the pudding to cool for about 30–45 minutes.
Then refrigerate for at least 2 hours.
Chilling allows the pudding to become thicker and lets the banana and caramel flavors blend together.
Make the whipped cream
Place the heavy whipping cream, powdered sugar, and vanilla extract in a chilled mixing bowl.
Beat with an electric mixer until soft-to-medium peaks form.
Do not overbeat.
Add the topping
Spread or pipe the whipped cream over the chilled banana pudding.
Drizzle the reserved caramel sauce over the top.
Sprinkle with crushed vanilla wafers if desired.
Serve
Spoon the pudding into individual bowls and serve chilled.
For an extra caramel flavor, add another small drizzle of warm caramel sauce immediately before serving.

Tips for the Best Crockpot Caramel Banana Pudding
Use bananas that are ripe and sweet but still firm. Very soft bananas can become mushy.
Don’t overcook the pudding. Slow cooking is mainly used to gently warm and combine the layers.
Chill thoroughly before serving for the best texture.
Add fresh banana slices on top just before serving for a fresher appearance.
Homemade caramel sauce gives the dessert a richer flavor.
If you want stronger caramel flavor, add an extra drizzle between the layers.
Q&A
Q: Can I make this without a crockpot?
A: Yes. Assemble the pudding in a deep baking dish and refrigerate it for at least 3–4 hours. There is no need to bake it.
Q: Can I use premade caramel sauce?
A: Yes. A good-quality caramel dessert sauce can replace the homemade caramel sauce.
Q: Can I use homemade vanilla pudding?
A: Absolutely. Homemade vanilla pudding works beautifully and gives the dessert an especially rich flavor.
Q: Why did my bananas turn brown?
A: Bananas naturally oxidize when exposed to air. Using firm bananas and keeping the pudding covered and refrigerated helps slow browning.
Q: Can I add more caramel?
A: Yes. Add additional caramel sauce between layers and over the whipped cream.
Q: Can I use whipped topping instead of homemade whipped cream?
A: Yes. Store-bought whipped topping is a convenient substitute.
Q: Can I add nuts?
A: Yes, if desired. Chopped pecans or walnuts pair especially well with the caramel and banana flavors. Add them immediately before serving for the best crunch.
Q: Can I make this ahead of time?
A: Yes. You can prepare it several hours ahead or the day before. For the freshest appearance, add the final banana slices, whipped cream, and caramel drizzle shortly before serving.
Q: How long does it last in the refrigerator?
A: Store covered in the refrigerator for up to 3 days. The vanilla wafers will soften over time, which is normal for banana pudding.
Q: Can I freeze banana pudding?
A: Freezing is not recommended because the bananas and creamy pudding can change texture after thawing. Refrigeration gives the best result.
