Ingredients:
For the Chicken:
2 large boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
½ teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon cayenne pepper, optional
1 tablespoon lime juice
For the Vegetables:
1 tablespoon olive oil
1 small onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
2 cloves garlic, minced
For the Quesadillas:
8 large flour tortillas
2 cups shredded Mexican cheese blend
½ cup shredded cheddar cheese
¼ cup fresh cilantro, chopped
1 tablespoon butter or olive oil for cooking

Instructions:
Prepare the Chicken:
Pat the chicken breasts dry with paper towels. Place them on a cutting board and, if they are very thick, gently pound them to an even thickness.
Season the Chicken:
Rub the chicken with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, cayenne pepper, and lime juice.
Cook the Chicken:
Heat a large skillet over medium heat. Add the seasoned chicken and cook for about 5–7 minutes per side, depending on thickness, until fully cooked.
Check that the chicken reaches an internal temperature of 165°F (74°C).
Transfer the chicken to a plate and let it rest for 5 minutes. Then slice or shred it into bite-sized pieces.
Cook the Vegetables:
In the same skillet, add 1 tablespoon olive oil. Add the onion and bell peppers.
Cook for 4–5 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.
Add the minced garlic and cook for another 30 seconds.
Add the shredded chicken back to the skillet and stir everything together. Remove from heat.
Assemble the Quesadillas:
Place one tortilla on a clean work surface. Sprinkle about ¼ cup of Mexican cheese over half of the tortilla.
Add some of the chicken and vegetable mixture.
Sprinkle with cheddar cheese and a little fresh cilantro.
Fold the tortilla in half to cover the filling.
Cook the Quesadilla:
Heat a clean skillet or griddle over medium heat. Lightly grease it with butter or olive oil.
Place the folded quesadilla in the skillet and cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crisp and the cheese has completely melted.
Repeat with the remaining tortillas and filling.
Slice and Serve:
Transfer the quesadillas to a cutting board and let them rest for 1–2 minutes.
Cut each quesadilla into 3 or 4 wedges.
Serve hot with sour cream, salsa, guacamole, jalapeños, fresh cilantro, and lime wedges.
