2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup ricotta cheese
1 large egg
2 tablespoons chopped fresh basil or parsley
¼ teaspoon garlic powder
¼ teaspoon black pepper
For the Topping:
½ cup shredded mozzarella
2 tablespoons grated Parmesan
Fresh basil or parsley for garnish
Instructions:
Prepare the Eggplant:
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Slice the Eggplant:
Wash and dry the eggplants. Cut them into round slices about ½-inch thick. Try to keep the slices similar in size so they cook evenly.
Season:
Arrange the eggplant slices on the baking sheet. Brush both sides lightly with olive oil. Sprinkle with salt, black pepper, garlic powder, and Italian seasoning.
Roast:
Bake for 15–18 minutes, flipping the slices halfway through. The eggplant should be tender and lightly browned but still firm enough to stack.
Make the Sauce:
While the eggplant roasts, heat 1 tablespoon olive oil in a small saucepan over medium heat. Add minced garlic and cook for about 30 seconds.
Add the marinara sauce, oregano, Italian seasoning, red pepper flakes, salt, and black pepper. Simmer for 5–7 minutes, then remove from heat.
Prepare the Cheese Mixture:
In a bowl, combine ricotta, Parmesan, egg, chopped basil or parsley, garlic powder, and black pepper. Mix until smooth.

Lower the oven temperature to 400°F (200°C).
Build the Stacks:
Lightly spread a spoonful of tomato sauce on the bottom of a baking dish.
Place one roasted eggplant slice in the dish. Add a small spoonful of the ricotta mixture, followed by a little mozzarella and tomato sauce.
Add another eggplant slice on top and repeat the layers. Depending on the size of your eggplant, make stacks about 2–3 slices high.
Finish each stack with tomato sauce, shredded mozzarella, and Parmesan.
Bake:
Cover loosely with foil and bake for 15 minutes.
Remove the foil and bake for another 8–12 minutes, until the cheese is melted, bubbling, and golden brown.
For an extra golden top, broil for 1–2 minutes. Watch carefully so the cheese does not burn.
Rest:
Allow the eggplant stacks to rest for 5 minutes before serving. Garnish with fresh basil or parsley.
