Cheesy Baked Vegetable Casserole

 Ingredients

Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced mushrooms

  • 1 yellow bell pepper, sliced

 Method

  1. Preheat oven to 400°F (200°C).
  2. Wash and cut all vegetables into similar-sized pieces.
  3. Place broccoli, cauliflower, mushrooms, peppers, tomatoes, carrot, and onion in a large bowl.
  4. Add olive oil, salt, pepper, Italian seasoning, and garlic powder. Toss well.
  5. Transfer vegetables to a greased 9×13-inch baking dish.
  6. Whisk together sour cream, mayonnaise, milk, Dijon mustard, garlic, and herbs.
  7. Pour the creamy sauce evenly over the vegetables.
  8. Sprinkle mozzarella, cheddar, and Parmesan over the top.
  9. Cover loosely with foil and bake for 20 minutes.
  10. Remove the foil and bake another 10–15 minutes, until the vegetables are tender and the cheese is golden and bubbly.
  11. Rest for 5 minutes, garnish with fresh herbs, and serve warm.
