 Homemade Fresh Lemon Drink

Ingredients

Fresh lemons 10–12 large
Cold water 2.5 liters
Granulated sugar 300–400 g
Lemon zest From 2 lemons
Honey 2 tbsp, optional
Salt 1 small pinch
Ice As needed
Lemon slices For serving

For a stronger lemon flavor: use 12 lemons and 350–400 g sugar.
For a less-sweet drink: use 250–300 g sugar.

Method

  1. Wash the lemons very well.
    Scrub the skins, particularly if you intend to use the zest.
  2. Make the lemon syrup.
    Put 500 ml water + the sugar + lemon zest into a saucepan. Heat gently, stirring until the sugar has completely dissolved. Don’t boil for a long time.
  3. Remove from the heat and let the syrup cool completely.
  4. Juice the lemons.
    You should get approximately 500–650 ml fresh lemon juice, depending on the lemons.
  5. Strain the juice through a fine sieve to remove seeds and excess pulp.
  6. In a large pitcher or food-safe container, combine:
    • cooled lemon syrup
    • lemon juice
    • remaining 2 liters cold water
    • pinch of salt
    • honey, if using.
  7. Stir thoroughly and taste.
    • Too sour → add a little more sugar.
    • Too sweet → add more lemon juice or water.
    • Too strong → dilute with cold water.
    • Want it more refreshing → add ice and mint.
  8. Refrigerate for at least 2 hours.
  9. Pour into clean bottles and keep refrigerated. Shake gently before serving because natural lemon pulp can settle.

Fill attractive glass bottles with the chilled lemonade, then serve in glasses over ice. Add a thin lemon slice to the rim and a few mint leaves. You can also make it slightly more concentrated before bottling and dilute individual servings with cold or sparkling water.

Important note about the lemons

For this style of drink, the juice—not the white pith—is what you want. If you use zest to flavor the syrup, grate only the thin yellow outer layer. Storage
