Ingredients

- 1 can (15 oz/425 g) chickpeas, drained and rinsed
- 1 can (15 oz/425 g) kidney beans, drained and rinsed
- 1 can (15 oz/425 g) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- ½ red bell pepper, diced
- ½ yellow bell pepper, diced
- ½ small red onion, thinly sliced
- ½ cup fresh parsley, finely chopped
- 2 tbsp fresh cilantro or mint, chopped
- ¼ cup olives, sliced, optional
Dressing
- ¼ cup extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- 1 garlic clove, minced
- 1 tsp Dijon mustard
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp honey or maple syrup, optional
- Pinch of chili flakes, optional
Method
- Prepare the beans:Â Drain and rinse all three types of beans thoroughly. Pat them gently dry to prevent a watery salad.
- Prepare vegetables:Â Add tomatoes, bell peppers, red onion, parsley, herbs and olives to a large bowl.
- Make dressing:Â Whisk olive oil, lemon juice, vinegar, garlic, Dijon, oregano, salt, pepper and honey together until emulsified.
- Combine:Â Add chickpeas, kidney beans and black beans to the vegetables. Pour over the dressing.
- Toss gently:Â Mix until everything is evenly coated without crushing the beans.
- Rest: Refrigerate for 15–30 minutes so the beans absorb the dressing and flavors develop.
- Taste and adjust:Â Add more lemon for brightness, salt for seasoning, or olive oil if the salad seems dry.
