- ½ tsp Italian seasoning or dried oregano
- ¼ tsp red pepper flakes, optional
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh parsley
For the sauce
- 2 tbsp butter
- 3 garlic cloves, finely minced
- 2 tbsp chicken or vegetable broth
- 1 tbsp soy sauce
- 1 tsp lemon juice
- ½ tsp honey, optional

- 1 tsp sesame oil
- 1 tbsp grated Parmesan
- Sesame seeds for garnish
- Extra lemon wedges
Step-by-Step
1. Prepare the shrimp
Pat the shrimp very dry with paper towels.
Season with:
- Salt
- Black pepper
- Paprika
- Italian seasoning
- Red pepper flakes
Toss well.
Tip: Dry shrimp brown much better and won’t release as much water into the pan.
2. Prepare the vegetables
Clean the mushrooms and cut them in half.
Trim the ends of the snow peas.
Slice some garlic thinly and keep a few cloves whole for the roasted-garlic appearance shown in the photo.
3. Sear the shrimp
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add the shrimp in a single layer.
Cook for approximately 1½–2 minutes per side, until pink, opaque, and lightly browned.
Remove the shrimp to a plate immediately.
Don’t fully cook them at this stage because they’ll return to the pan later.
4. Cook the mushrooms
Add the remaining 1 tbsp olive oil.
Add mushrooms and cook for 3–4 minutes, stirring occasionally.
Allow them to brown rather than constantly stirring them.
Add the garlic and cook for another 30–60 seconds.
5. Add the snow peas
Add the snow peas to the skillet.
Cook for approximately 2–3 minutes.
They should become bright green and tender-crisp while retaining some crunch.
6. Make the sauce
Reduce the heat to medium.
Add:
- 2 tbsp butter
- 3 minced garlic cloves
- 2 tbsp broth
- 1 tbsp soy sauce
- 1 tsp lemon juice
- ½ tsp honey, if using
Stir for about 1 minute until the butter melts and the sauce becomes glossy.
7. Return the shrimp
Put the shrimp back into the skillet.
Toss everything together for 1–2 minutes, just until the shrimp are heated through and coated in the sauce.
Don’t overcook them.
8. Finish
Turn off the heat.
Add 1 tbsp fresh lemon juice and chopped parsley.
For extra richness, add 1 tsp sesame oil.
Toss gently and serve immediately.
