This image looks like a crispy Caprese-style grilled cheese with thick toasted bread, juicy tomatoes, fresh basil, and lots of melted mozzarella. Similar recipes use sourdough, mozzarella, tomato, basil, pesto, and butter or mayo, cooked slowly until golden and the cheese is fully melted.
Ingredients — 2 sandwiches
- 4 slices thick sourdough or rustic Italian bread
- 200 g (7 oz) fresh mozzarella, sliced
- 2 medium ripe tomatoes, thinly sliced
- ½ cup fresh basil leaves, roughly torn
- 2 tbsp basil pesto
- 2 tbsp softened butter
- 1 tbsp mayonnaise — optional, for extra-crispy bread
- 1 small garlic clove, finely grated
- ¼ tsp salt
- ¼ tsp black pepper
- 1–2 tsp balsamic glaze, optional
- 1 tsp olive oil, optional
Instructions
- Prepare the bread: Mix softened butter with grated garlic. Spread a thin layer on the outside of all 4 bread slices.
- Spread about 1 tbsp pesto on the inside of each sandwich.
- Layer mozzarella, tomato slices, basil, salt, and black pepper. Use plenty of mozzarella so it becomes beautifully gooey.
- Close the sandwiches and gently press them together.
- Heat a skillet or grill pan over medium-low heat.
- Place the sandwiches in the pan. Cook for 3–5 minutes until the bottom is deeply golden and crisp.
- Carefully flip. Cover the pan with a lid and cook another 3–4 minutes, allowing the mozzarella to melt completely. Low-and-slow cooking helps the cheese melt without burning the bread.
- Remove and rest for 1–2 minutes.
- Cut diagonally to reveal the melted cheese and tomato filling.
- Finish with fresh basil and a small drizzle of balsamic glaze.
 Nut information / Q&A
Does this recipe contain nuts?
- The basic sandwich contains no nuts.
- Pesto can contain pine nuts, so check the pesto label carefully.
- For a completely nut-free version, use nut-free pesto or replace pesto with olive oil, basil, garlic, and a little Parmesan.
Is it vegetarian?
Yes, provided the mozzarella, pesto, and Parmesan (if used) are vegetarian-friendly.
Can I make it without pesto?
Yes. Use garlic butter or a little olive oil instead.
Can I use cheddar?
Yes, but mozzarella gives the classic stretchy, creamy Caprese texture.
Best bread?
Sourdough or a sturdy rustic Italian bread works especially well because it stays crisp while holding the juicy tomatoes.
How do I prevent soggy bread?
Pat the tomato slices dry with paper towel before assembling, don’t overfill with tomatoes, and cook over medium-low heat rather than high heat.
Can I make it gluten-free?
Yes—use certified gluten-free bread and verify the pesto and other packaged ingredients are gluten-free.
Can I make it dairy-free?
Yes, use a dairy-free mozzarella-style cheese and dairy-free butter.
Approximate nutrition: about 450–600 calories per sandwich, depending mainly on the bread, mozzarella, butter, and pesto.
