1 lb (450 g) lean ground beef
1 medium head green cabbage, about 2 lb (900 g), chopped
1 large yellow onion, diced
2 medium carrots, peeled and sliced
2 celery stalks, diced

4 cups (960 ml) low-sodium beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon smoked paprika
½ teaspoon black pepper
½ teaspoon salt, plus more to taste
1 bay leaf
½ teaspoon red pepper flakes, optional
1 tablespoon olive oil, if needed for browning

1 cup cooked white beans or kidney beans
1 cup cooked rice
½ cup chopped fresh parsley
1–2 teaspoons apple cider vinegar at the end for brightness

Instructions
1. Prepare the vegetables
Wash and chop the cabbage into bite-size pieces. Dice the onion and celery and slice the carrots. Mince the garlic.
2. Brown the beef
Heat a large skillet over medium-high heat. Add the ground beef and onion.
Cook for 5–7 minutes, breaking the beef apart with a spoon, until browned and no longer pink.

Black pepper
Salt
Bay leaf

4. Slow cook
Cover and cook:
LOW: 6–8 hours
HIGH: 4–5 hours

5. Final seasoning
Remove the bay leaf.
Taste the soup and adjust salt and pepper.

If using cooked rice, stir it in during the last 20–30 minutes.
If using canned beans, drain and rinse them first and add them during the final 30–45 minutes.
