Ingredients
For the fritters
2 medium zucchini/courgettes, grated
2 medium carrots, grated
1 cup finely shredded cabbage
½ cup sweet corn
½ small onion, finely chopped
2 spring onions, sliced
2 cloves garlic, minced
2 large eggs
¾ cup all-purpose flour
¼ cup cornstarch/cornflour
½ tsp baking powder
1 tsp cumin powder
1 tsp paprika
½ tsp chili flakes
½ tsp black pepper
1 tsp salt, plus extra for the zucchini
2 tbsp chopped parsley or coriander
½ cup grated cheese, optional

For the yogurt dip
1 cup thick Greek yogurt
1 small garlic clove, finely grated
1 tbsp lemon juice

Method
1. Prepare the zucchini
Put the grated zucchini into a bowl and sprinkle with about ½ teaspoon salt.
Leave for 10 minutes.

2. Mix the vegetables

Place in the pan and flatten slightly.

6. Drain
