Nut/allergen information
This recipe contains no tree nuts or peanuts.
However, the following are potential allergens:
Milk/dairy: Parmesan, milk, butter, sour cream/yogurt
Egg: eggs and mayonnaise
Wheat/gluten: regular breadcrumbs and panko, unless gluten-free varieties are used
For a nut-free recipe, check packaged breadcrumbs, Parmesan, mayonnaise, and seasonings for facility warnings if cooking for someone with a serious allergy.
For gluten-free: use certified gluten-free panko and breadcrumbs.
For dairy-free: use dairy-free Parmesan and plant milk, and substitute the sour cream/yogurt in the dip with a dairy-free alternative.
Step-by-Step Recipe
1. Prepare the cauliflower
Preheat the oven to 425°F (220°C).
Line a large baking sheet with parchment paper and lightly grease it.
Remove the leaves from the cauliflower and cut it into large florets.
For the look in your photograph, don’t make the florets too small. Aim for pieces approximately 2–3 inches (5–7.5 cm).
Wash and dry them thoroughly.
Important: Pat the cauliflower very dry. Excess water prevents the coating from becoming crispy.
2. Make the crispy coating
In a large bowl, combine:
1 cup panko
¼ cup regular breadcrumbs
½ cup Parmesan
garlic powder
onion powder
Italian seasoning
paprika
black pepper
salt
dried parsley
Mix thoroughly.
Drizzle in 2 tbsp olive oil or melted butter and mix again.
This little bit of fat helps the breadcrumbs turn deeply golden and crunchy.
3. Prepare the egg mixture
In a second bowl, whisk together:
2 eggs
¼ cup milk
Whisk until completely combined.
4. Coat the cauliflower
Take one cauliflower floret at a time.
Dip → coat → press.
Dip the cauliflower into the egg mixture.
Let the excess drip off.
Place it into the breadcrumb mixture.
Turn it several times.
Press the breadcrumbs firmly onto the cauliflower.
The pressing step is important—the thick, craggy coating in your picture comes from getting plenty of crumbs attached.
Place each coated piece on the prepared baking sheet.
Don’t crowd them. Leave a little space between each piece so hot air can circulate.
5. Bake
Bake at 425°F (220°C) for approximately 20–25 minutes.
At around the 12–15 minute mark, carefully turn the pieces if necessary.
Continue baking until:
the cauliflower is tender when pierced with a knife
the coating is crisp
the Parmesan is golden brown
the edges are deeply browned
For an even darker, restaurant-style crust, switch to broil/grill for 1–2 minutes at the end.
Watch it closely because Parmesan and breadcrumbs can burn quickly.
Creamy Herb Dip
While the cauliflower cooks, combine:
½ cup mayonnaise
½ cup sour cream or Greek yogurt
grated garlic
lemon juice
parsley
dill
Italian herbs
salt
pepper
Mix well.
If it’s too thick, add 1 tbsp water at a time until you reach your preferred consistency.
Refrigerate until serving.
The lemon and herbs provide a nice contrast to the rich, crispy Parmesan coating.
How to make it extra crispy
For the closest texture to the photograph:
1. Use panko.
Panko produces a much crunchier crust than ordinary breadcrumbs.
2. Don’t skip Parmesan.
It adds both flavor and the browned, crispy patches visible in the picture.
3. Dry the cauliflower extremely well.
4. Don’t overcrowd the tray.
5. Use a generous coating.
Press the crumbs onto the cauliflower rather than merely sprinkling them.
6. Bake hot.
425°F/220°C gives you a much better crust than a low-temperature bake.
7. Finish under the broiler.
One or two minutes can give you those beautiful dark golden spots.
Air-Fryer Version
You can also make these in an air fryer.
Temperature: 400°F (200°C)
Place the coated cauliflower in a single layer.
Cook for approximately 12–16 minutes, turning/shaking halfway through.
Depending on the size of your florets and your particular air fryer, they may need another 2–4 minutes.
Don’t overcrowd the basket—cook in batches if necessary.
