| Fresh cilantro or dill, chopped | 2 tbsp, optional |
| Salt | 1–1¼ tsp, to taste |
| Black pepper | ½ tsp |
| Dried oregano | ½ tsp |
| Dried thyme | ½ tsp |
| Paprika | ½ tsp |
| Lemon juice | 1–2 tbsp |

Optional additions
For a more substantial soup, you can add:
- ½ cup cooked chickpeas
- ½ cup cooked white beans
- ½ cup small pasta
- ½ cup cooked lentils
- ½ cup shredded chicken
- 1–2 tbsp grated Parmesan when serving
Detailed Method
1. Prepare the vegetables
Wash everything thoroughly.
Cut the vegetables relatively small and uniformly so they cook at roughly the same rate. Keep the broccoli in small florets and shred the cabbage fairly thinly.
2. Sauté the aromatics
Heat 1½ tbsp olive oil in a large soup pot over medium heat.
Add:

- carrots
- celery
Cook for 5–6 minutes, stirring occasionally, until the onion becomes translucent.

3. Add the harder vegetables

- green beans

4. Add broth
Pour in 6 cups vegetable broth.
Bring the soup to a gentle boil, then reduce the heat to medium-low.
Cover partially and simmer for 10–12 minutes.
5. Add broccoli and cabbage
Add the broccoli and shredded cabbage.
Simmer for another 8–10 minutes.
You don’t want to overcook the vegetables. The broccoli and cabbage should be tender but still retain some texture and color.
6. Season
Add salt gradually and taste.

- fresh parsley
- cilantro/dill if using
- lemon juice
- red-pepper flakes if desired

7. Finish
Simmer for another 2–3 minutes, then turn off the heat.
Let it stand for 5 minutes before serving.

Serving
Serve approximately 1½–2 cups per person.
