Crispy on the outside, creamy and cheesy inside, these shrimp mac and cheese balls make a delicious appetizer, party snack, or fun family dinner. They combine creamy macaroni and cheese with seasoned shrimp, then coat everything in crunchy breadcrumbs and fry or air-fry until golden.

Ingredients
For the Shrimp Mac & Cheese
8 oz (225 g) elbow macaroni
8 oz (225 g) raw shrimp, peeled, deveined, and finely chopped
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1½ cups whole milk
½ cup heavy cream
1 cup shredded sharp cheddar cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon black pepper
½ teaspoon salt, or to taste
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice
For the Coating
1 cup all-purpose flour
2 large eggs
2 tablespoons milk
1½ cups panko breadcrumbs
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon black pepper
¼ teaspoon salt
For Frying
Vegetable or canola oil, enough for deep or shallow frying
Optional Dipping Sauce
½ cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon lemon juice
½ teaspoon garlic powder
1 teaspoon chopped parsley
Instructions
1. Cook the Macaroni

Bring a large pot of salted water to a boil.

Cook the macaroni according to the package directions until just al dente.

Drain well and set aside.

Avoid overcooking the pasta because softer pasta can make the balls difficult to shape.

2. Cook the Shrimp

Pat the shrimp dry and chop them into very small pieces.

Heat 1 tablespoon butter in a skillet over medium heat.

Add the shrimp and minced garlic.

Cook for approximately 2–3 minutes, stirring occasionally, until the shrimp become opaque and cooked through.

Remove from the heat and set aside.

3. Make the Cheese Sauce

Melt 2 tablespoons butter in a saucepan over medium heat.

Whisk in the flour and cook for about 1 minute.

Gradually whisk in the milk and heavy cream.

Continue cooking for 3–5 minutes, stirring constantly, until the sauce thickens.

Reduce the heat to low.

Add the cheddar, mozzarella, and Parmesan.

Stir until the cheeses are completely melted and the sauce is smooth.

Season with paprika, garlic powder, onion powder, black pepper, and salt.

4. Combine Everything

Add the cooked macaroni to the cheese sauce.

Fold in the cooked shrimp, parsley, and lemon juice.

Mix until everything is evenly coated.

Taste and adjust the seasoning if needed.

5. Chill the Mixture

Transfer the mac and cheese mixture to a shallow container.

Cover and refrigerate for at least 2 hours, preferably overnight.

This step is very important because the mixture needs to become firm enough to shape.

6. Form the Balls

Scoop approximately 2 tablespoons of the chilled mixture.

Roll it firmly between your hands to form a ball.

Repeat until all the mixture is used.

Place the balls on a parchment-lined tray.

If the mixture becomes soft while shaping, refrigerate the balls for another 15–20 minutes.

7. Prepare the Breading Station

Place the flour in one shallow bowl.

In a second bowl, whisk together the eggs and milk.

In a third bowl, combine the panko breadcrumbs, paprika, garlic powder, black pepper, and salt.

8. Coat the Balls

Roll each mac and cheese ball in flour.

Shake off the excess.

Dip it into the egg mixture.

Finally, roll it thoroughly in the seasoned panko breadcrumbs.

For an extra-crispy crust, repeat the egg and breadcrumb coating a second time.

9. Fry

Heat oil to approximately 350°F (175°C).

Carefully place several balls into the hot oil without overcrowding the pan.

Fry for about 2–3 minutes, turning occasionally, until golden brown and crispy.

Transfer to a paper-towel-lined plate or wire rack.

Continue with the remaining balls.

10. Make the Dipping Sauce

Combine mayonnaise, sweet chili sauce, lemon juice, garlic powder, and parsley.

Mix until smooth.

Refrigerate until ready to serve.

11. Serve

Serve the shrimp mac and cheese balls while hot and crispy with the dipping sauce on the side.

Air Fryer Method

For a lighter preparation:

Preheat the air fryer to 390°F (200°C).
Lightly spray the breaded balls with cooking spray.
Arrange them in a single layer, leaving space between each.
Air fry for approximately 8–12 minutes, turning halfway through.
Cook until crisp and golden brown.

Cooking time varies by air fryer and ball size.

Oven-Baked Method
Preheat the oven to 425°F (220°C).
Place the breaded balls on a parchment-lined baking sheet.
Lightly spray them with cooking oil.
Bake for approximately 18–22 minutes, turning halfway through.
Bake until golden brown and crisp.
Tips for Perfect Mac & Cheese Balls
Chill the mixture well. Cold mac and cheese is much easier to shape.
Chop the shrimp small so it distributes evenly.
Don’t make the balls too large, or the outside may brown before the center becomes hot.
Press the breadcrumbs firmly onto each ball.
Double-breading gives you an especially crispy crust.
Use a wire rack after frying to help preserve the crispy exterior.
Don’t overcrowd the fryer or air fryer.

Recipe Q&A

Q: Can I use frozen shrimp?
Yes. Thaw them completely, remove excess moisture, and pat them very dry before cooking.

Q: Can I use another type of seafood?
Yes. Finely chopped cooked crab, lobster, or cooked white fish can be substituted for some or all of the shrimp.

Q: Can I use leftover mac and cheese?
Absolutely. This recipe is an excellent way to turn leftover thick mac and cheese into crispy bites. Mix in cooked chopped shrimp before chilling.

Q: Why are my balls falling apart?
The mac and cheese mixture may not be cold or firm enough. Chill it longer, and make sure you press each ball firmly when shaping.

Q: Can I prepare these ahead of time?
Yes. Bread the balls, place them on a parchment-lined tray, cover, and refrigerate for up to 24 hours before cooking.

Q: Can I freeze them?
Yes. Freeze the breaded, uncooked balls in a single layer until firm, then transfer them to a freezer-safe container. They can be frozen for up to 2 months.

Q: Do I need to thaw frozen mac and cheese balls?
No. They can generally be cooked from frozen. Add a few extra minutes to the cooking time and make sure the center is thoroughly hot.

Q: What cheese works best?
Sharp cheddar provides strong flavor, mozzarella gives stretchiness, and Parmesan adds a savory finish. Monterey Jack or Colby Jack can also work well.

Q: Can I make them spicy?
Yes. Add cayenne pepper, Cajun seasoning, chopped jalapeño, or hot sauce to the mac and cheese mixture.

Q: What dipping sauces go well with them?
Sweet chili sauce, garlic aioli, spicy mayo, remoulade, ranch, or marinara all work well.

Q: How do I store leftovers?
Refrigerate cooked leftovers in an airtight container for up to 3 days.

Q: How do I reheat them while keeping them crispy?
Reheat them in an air fryer at 375°F (190°C) for 4–6 minutes or in a 400°F (200°C) oven for about 8–10 minutes.
