1️⃣ Prepare the Filling

  • Heat olive oil in a pan over medium heat.
  • Sauté onion 2–3 minutes until soft.
  • Add garlic and cook 30 seconds until fragrant.
  • Add zucchini and bell pepper; cook 4–5 minutes until tender.
  • Stir in spinach, cherry tomatoes, olives, oregano, thyme, salt, and pepper.
  • Cook 2 minutes, then remove from heat and let cool slightly.
  • Fold in crumbled feta.
